The best slow cooker roast beef

In our self service farm shop, you can find a number of our very own grass fed Aberdeen Angus joints, which are perfect for roasting. We currently have topside and brisket, both available (while stocks last) in small (0.9-1.2kg) and large (1.7-2kg). Here’s how you can make the very best slow cooker roast beef!

These joints are both perfect cooked low and slow and work wonderfully in a slow cooker. I actually cook both of these in my slow cooker! Check out this blog for 2022 best slow cookers.

I’ve had many ask how best to cook, so I’ve popped my slow cooker recipe below. I’m no chef! But I do cook a damn good roast beef (if I do say so myself!)

I’d take out of the fridge around 11am, to eat at 7pm, cooking on low for 7 hours.

Ingredients

1-2kg roasting joint (works great with Topside, Silverside and Brisket)

500ml of good quality red wine (we particularly like a Cotes Du Rhone or Argentinian Malbec)

250ml beef stock made with a stock cube (all for ease!)

1 large onion, I use red onions

1 garlic (or 1 tablespoon garlic granules)

Black pepper to season

Oregano

2 tablespoons oil (vegetable or olive)

Method

– Remove your joint from the fridge 10 minutes before you want to begin cooking

– Heat 2 tablespoons of oil in a frying pan and set on a high heat

– Start by searing all sides of your joint in the frying pan

– Chop your onion into large pieces and place in the slow cooker

– Place your roasting joint on top of the onion in the slow cooker

– Pour 500ml of red wine over the beef

– Make your stock – mix 1 stock cube with 250ml boiling water, and add the garlic, pepper and oregano. Stir well and pour over the beef joint.

– Add lid and leave to cook for 7 hours (slow setting)

– When the cooking time is over, place in a pre-heated oven (200°c) for 8 minutes.

– Remove from oven, wrap in tin foil and rest for 30 minutes.

– Enjoy!

– We then make gravy with the liquid in the slow cooker, although we do cheat a little, and mix Bisto granules into the liquid, delicious!

I’d only add salt when it’s on my plate (if it needs it), just so it doesn’t dry it out!
